Instapot Pot Roast Recipe

Some of you might have already heard about how much I love my instapotIt has easily become one of my favorite cooking tools. It’s like a crock pot, expect 20 times faster! What mom doesn’t love easy meals right? This week I tried my hand at making Instapot Pot Roast! Now I’ll admit, it isn’t the prettiest dish out there (obviously) but man did it taste good! It’s nice and hot, the meat was tender and the veggies were full of flavor. And the best part? It took under 2 hours to make! Whatttt? Yes!  Let’s check out how easy it is to make it!

Here is how to make my Instapot Pot Roast Recipe:



You Will Need:

  • 3 1/2 lb. Beef Chuck
  • 1 tbsp oil
  • 2-4 large potatoes (peeled and chopped)
  • 1 large onion (peeled and chopped)
  • 1 cup carrots (peeled and chopped)
  • 1 can beef broth
  • salt and pepper to taste

Instructions for making Instapot Pot Roast:

Step 1: Cut your beef chuck into chunks. (You don’t have to do this, I have just found that it cooks a little more evenly if you do. Set your instapot to the sear option. Pour your oil in the bottom of the pot.  When your oil begins to sizzle, brown your  meat on both sides.

Step 2: Remove your beef roast from the instapot and add onions, broth, carrots, and any spices your would like. Put your beef roast back in the cooking pot on top of the onions.

Step 3: Lock your lid in place and set on pressure cook for 60 minutes. After done cooking turn off your pot and let sit for at least 10 minutes until doing a quick release.

Step 4: If you sauce is thin add a slurry of water and flour and stir in your pot roast.

These are my favorite pressure cooker accessories. I find the one I use the most is the Silicone starter pack. I use it for every meal I make in the pressure cooker or outside of it.

And that’s it! Simple, faster than using a slow cooker or oven, and taste’s oh-so-yummy. Doesn’t look the best but it sure does taste the best!
