Pressure Cooker Thai Chicken Recipe
I love to make Thai food and knew I could make it faster in my pressure cooker, so I gave it a shot. Of course, it turned out great, and my whole family enjoyed it! So I had to share it with you as well! This recipe you can eat by itself, with rice or lo mein noodles. This Pressure Cooker Thai Chicken Recipe is a simple two-step process.
Easy Pressure Cooker Thai Chicken Recipe
Ingredients:
3 chicken breast
olive oil
1/2 onion
1/2 bell pepper
1 c Thai peanut sauce
20 oz of broccoli stir fry veggies ( frozen isle)
3 tablespoons of soy sauce
1 tablespoon of minced garlic
1/2 c peanuts
1 tsp of ginger
topped with shredded carrots
could serve with brown rice or lo mein noodles (I used the noodles.)
Here’s how to make this electric pressure cooker Thai chicken recipe
First I cook the chicken in the pressure cooker with 1 cup of water. Cook for 10 minutes then remove and shred. Save the broth for another recipe.
Add to the pot a splash of olive oil, onion, bell pepper, broccoli stir fry veggies, soy sauce, ginger, Thai sauce, and peanuts. Cook on Saute for about 10 minutes.
Add the chicken back in for 5 minutes.
Once the veggies are cooked the way you like then plate and serve with rice or lo mein.
If you want to serve with rice I like using brown rice. Toss 1 cup of brown rice, and one cup plus two tablespoons of water ( or use the broth from the chicken you just saved for more flavor) press the rice button and its done in about 15 minutes!
This is such an easy pressure cooker recipe and taste so wonderful. I almost wish I doubled the recipe now because we didn’t even have leftovers!

You need this Silicon Lifter or your foil sling. You can put your Spring pan on the sling or foil and once the pressure cooker is done cooking release the pressure using your mitts
