Fall Roasted Vegetable Recipe
Nothing says fall to me like butternut squash. I know everyone swoons over pumpkin flavored everything but for me butternut squash far surpasses the flavor of pumpkin as a sign that fall has arrived. This fall roasted vegetable recipe is super easy and feeds a crowd so it is perfect for family get together. It is also great because you can pair this dish of roasted veggies with any kind of meat. We usually have it with pork tenderloin but recently had it with baked tilapia. Bonus: butternut squash is in season and only $0.99/lb at my produce market.
Fall Roasted Vegetable Recipe
- 1 red pepper
- 1 head of cauliflower
- 1 butternut squash
- 1 onion
- olive oil
- pepper
- salt
Cut all the vegetables into bite size pieces. Mix together with enough olive oil to coat the vegetables and add salt and pepper to your liking. Roast in the oven @ 375º F for about 45 minutes or until vegetables are tender.
