Gluten Free Lemon Poppyseed Muffin Recipe
I’m back with another awesome Gluten Free Recipe today! If there is one thing I love it’s any kind of muffin! I love sweet muffins, savory muffins, any kind of muffins! They are easy to make and are great for a grab and go breakfast or snack! Some people may think that just because you are Gluten Free that that means you can no longer enjoy muffins, and that is simply not true! With a simple change in some ingredients you can still have these tasty treats whenever you would like! Today I’m going to show you how to make one of my favorite type of muffins, my Gluten Free Lemon Poppyseed Muffins!
Here is how to make my Gluten Free Lemon Poppyseed Muffins:
You Will Need:
- 2 cups Gluten Free Flour
- 3 eggs
- 2 tbsp poppy seeds
- 1/2 tsp salt
- 1 tsp baking soda
- 1 tsp baking powder
- 2/3 cups honey
- 2/3 cups (melted) coconut oil
- 1/2 cup coconut milk
- 2 tbsp lemon juice
- Zest from 1 lemon
Step 1: Preheat your oven to 350 degrees. In a large mixing bowl sift your gluten free flour, salt, baking powder and baking soda. Whisk to combine.
Step 2: In another bowl mix together your melted oil and honey. Make sure it is well combined. Add in your eggs one at a time, mixing in between each egg. Add your coconut milk, lemon juice, lemon zest, and poppy seeds. Mix to combine.
Step 3: Make a well in the middle of your dry ingredients and slowly pour your wet ingredients into the well and use a wooden spoon to combine until your batter is formed.
Step 4: Pour your batter into muffin liners in your muffin tin and bake for 20 minutes.
Step 5: Remove from oven and let cool before serving.
That’s it! See, you can still have a yummy muffin even if you are Gluten Free! Enjoy!
