Gluten Free Pressure Cooker Chicken Recipe
I am the queen of the dump meal. I find that I am so crazy busy I often forget about making dinner until someone complains. I love this meal because it used pantry staples to create something that resembles a well thought out balanced meal. I pretend like it was planned, but it is the meal I fall back on when I need something quick that my kids like and that I know I will eat the next day over a baked potato for lunch. This Gluten Free Pressure Cooker Chicken Recipe will become one you love and let me tell you it is easy.
The Gluten Free Instant Pot Chicken Pineapple Taco is an easy meal, and you can control how spicy you make it based on the salsa you select and the taco toppings. I have tried several flavors of salsa, and my family loves when I add mango salsa and my husband loves when I do a spicy variety. I swear he has burned off his taste buds because he likes things hot but the rest of the family doesn’t so I often add a Tablespoon of the hot stuff to top his off and use the medium or the mild in the pressure cooker taco recipe below.
I should also note that you can use pork instead of chicken but the cooking times will be different since pork takes longer to cook than chicken does. We all like an easy pressure cooker chicken recipes so let me share this one.
Gluten Free Pressure Cooker Chicken Recipe
These are my suggestion chart for cooking times.
Gluten Free Pressure Cooker Chicken Pineapple Taco Ingredients:
1 pound chicken breast
One can black beans drained
One can corn, drained
One can of cubed or crushed pineapple
One small container of salsa
Desired taco toppings
Directions:
1. Pour 1/2 the jar of salsa on the bottom of your pressure cooker
2. Lay uncooked chicken breasts on top of the salsa.
3. Dump the entire can of corn, beans, and pineapple on top of the chicken. This will result in you not having to add the normal amount of liquid.
4. Pour the remaining salsa on top of the mixture.
5. Cook chicken using the meat setting for 10 minutes if the chicken in frozen pressure cook for 13 minutes. You may have to manually adjust your settings to achieve this time frame.
Then let the pressure out of the pressure cooker by twisting the release valve using our mitts to allow for the steam to escape. When all the steam has escaped, then you can open the pot.
6. Use the thermometer to determine if it is done.
You can serve this gluten-free pressure cooker recipe in your favorite taco shell (hard or soft) and use your desired toppings. The pineapple chicken taco also works well served on top of rice.
