Lemon Scones Recipe
Ingredients:
2 C coconut flour
1/2 C sugar
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1/2 C cold stick margarine ( non-butter )
1/2 C Almond milk
1-1/2 tsp grated lemon peel
Directions:
Preheat oven to 350 degrees. Use Pam spray and prepare the cookie sheet.
Combine the coconut flour, sugar, baking powder, baking soda, and salt in a bowl.
With the cold margarine cut into the coconut flour mixture until it looks like crumbs.
Combine the Almond milk and lemon peel. gently mix.
Flour the wooden cutting board kneading gently 5-6 times. Divide the batter into two equal parts. Make each into a ball.
Put each half onto the greased cookie sheet.
Cut wedges in the dough but not all the way through to the bottom of the dough.
Bake at 350 degrees for 20-25.
Lemon Lime Glaze Recipe
Ingredients:
2 C powdered sugar
2 tsp lemon zest
1 TBSP fresh lime juice
1 1/2 TBSP fresh lemon juice
Directions:
Mix all the ingredients together and pour over the scone.
