First I cook the chicken in the pressure cooker with 1 cup of water. Cook for 10 minutes then remove and shred. Save the broth for another recipe!
Add to the pot a splash of olive oil, onion, bell pepper, broccoli stir fry veggies, soy sauce, ginger, Thai sauce, and peanuts. Cook on Saute for about 10 minutes.
Add the chicken back in for 5 minutes!
Once the veggies are cooked the way you like then plate and serve with rice or lo mein.
If you want to serve with rice. I like using brown rice. Toss 1 cup of brown rice, and one cup plus two tablespoons of water ( or use the broth from the chicken you just saved for more flavor) press the rice button and its done in about 15 minutes!
