Baked Salmon with Pesto

Ingredients
  

  • 4 6 oz skinless salmon, skinless fillets
  • 1- pint Sliced Grape Tomatoes
  • 1/4 cup of red onions
  • 2 large peppers I like orange and yellow for the colors
  • 4 tbsp Pesto homemade or store bought see our recipe for pesto without nuts
  • 1 Salt and freshly ground black pepper
  • 3 tsp Olive oil
  • I roll of heavy foil

Instructions
 

  • I create four squares of foil that are double the size of your salmon slices.
  • You will then need to place the salmon in the middle of the foil packet.
  • Then I put the onions and peppers under the salmon.
  • Then apply some olive oil and salt and pepper.
  • I then put on a layer of pesto.
  • The final layer is the sliced tomatoes on the top. You then close the foil and create packets of the salmon.
  • You can place these on the grill. I put them in my oven at 400 degrees for 25 minutes it depends on how thick your salmon is. I check on them to make sure the salmon is pink. We like our salmon a little raw for we leave them in for less than 22 minutes.
