Easy Crockpot Meatloaf: Apricot Stuffed Crockpot Meatloaf

Ingredients
  

  • 1/2 Jar of Apricot jam or 9 oz
  • 1 Large Onion Chopped
  • 1 Large Bell Pepper chopped
  • 2 Eggs beaten
  • 3/4 Cup Milk
  • 3/4 Cup Breadcrumbs
  • 1 Package Dry Lipton Onion Soup Mix
  • 2-3 Pounds Ground Beef
  • Foil to line the pot
  • Crockpot

Instructions
 

  • Line your crockpot with foil or buy those awesome liners for an easy clean up
  • Then set it on low
  • Mix together the Eggs...Milk...Dry Crumbs...and Onion Soup Mix.
  • Then add meat and Onions and Peppers... mix all thoroughly
  • Then make in to a boat shape and fill it with the jam.
  • Then a attach the sides to the top. I always reserve a little of the jam to glaze the loaf 15 minutes prior to serving!
  • Cook for 6-8 hours
