Acai Chicken Wrap

Ingredients
  

  • 2 Boneless skinless chicken breasts
  • 1 tablespoon Mrs. Dash Garlic & Herb
  • 1/2 cup Acai juice or juice blend
  • 3 tablespoons Granulated sugar
  • 3 tablespoons Rice vinegar
  • 1 1/2 tablespoon Light/mild extra virgin olive oil
  • 2 tablespoons Lemon juice Can substitute orange juice
  • 1/2 cup Craisins
  • 1/2 cup Roasted & salted pumpkin & sunflower seed mix or 1/4 c. of each, respectfully
  • 1/4 cup Grape tomatoes quartered
  • 1/2 cup Seedless cucumber cubed
  • 1 pinch Freshly ground black pepper
  • 4 Italian Herb or Spinach wraps
  • 1/4 cup Fresh spinach leaves

Instructions
 

  • Bring a large pot of water to a boil and add chicken and Mrs. Dash. Cook until done, approximately 20 minutes. Check internal temp with a meat thermometer if unsure.
  • Remove chicken from water and let cool while you prepare the dressing.
  • In a small bowl, combine Acai juice, sugar, vinegar, olive oil, lemon juice and stir until dissolved.
  • Add craisins, seeds, tomatoes, cucumber, pepper and chicken to dressing and mix well.
  • Begin to assemble the wrap with spinach leaves, then spoon on chicken mixture. Fold the wrap & enjoy!
  • Makes 3-4 wraps.
