Gluten Free Dressing

Ingredients
  

  • 1 recipe yellow cornbread *
  • 1-2 onions chopped
  • 1 cup celery chopped
  • 1/2 pound mild or hot sausage
  • salt and pepper
  • 1 teaspoon thyme do NOT omit
  • 2 eggs

Instructions
 

  • Mix cornbread, onions, celery, and sausage. Add eggs. You will probably have to finish mixing with your hands. Due to the variety of gluten free cornbread and breads the moisture in this recipe will have to be checked at this stage. The mixture should be wet enough that the mix can hold together in a ball but not so wet that it sticks to your hands. If too dry can add milk or chicken broth. If too moist add pieces of stale gluten free bread or toast. Bake in ungreased 8x8 pan 1 hour at 350. Freezes very well.
