Kids, Let’s Make Whoopie Pie Recipe
They are as good as they look!!!
I had to write that.. who remembers that phrase… Well this Whoopie Pies are Yummy. They are a crowd favorite a kids desire and can be made smaller for a special event. They are fairly easy to make and they even freeze nicely. I suggest making them a day ahead.
For the cakes
- 2 cups all-purpose flour
- 1/2 cup cocoa powder
- 1 1/4 teaspoon baking soda
- 1/3 teaspoon salt
- 1 cup well-shaken buttermilk
- 1 teaspoon vanilla
- 1 stick (1/2 cup) unsalted butter, softened
- 1 cup packed dark brown sugar
- 1 large egg yolk
For the yummy filling you will need
- 1 stick (1/2 cup) unsalted butter, softened
- 1 1/4 cups confectioners sugar
- 1 cup marshmallow cream such as Marshmallow Fluff
- 1 teaspoon vanilla
Whoopie Pie filling:

You will need to blend together butter, confectioners sugar, marshmallow, and vanilla in a bowl with electric mixer at medium speed until smooth, about 3 minutes.
For another non traditional peanut butter filling or just use any flavor of ice cream
- 1 stick (1/2 cup) unsalted butter, softened
- 1 1/4 cups confectioners sugar
- 1 cup peanut butter
Cooking part:

Turn on the oven to 350ºF.Then blend together flour, cocoa, baking soda, and salt in a bowl until combined. Stir together buttermilk and vanilla in a small bowl.Use a high speed mixer and place the butter and brown sugar in a large bowl. This should take about 3 minutes in a standing mixer or 5 minutes with a handheld, then add egg, beating well. Reduce speed to low and alternately mix in flour mixture and buttermilk in batches, beginning and ending with flour.Spoon 1/4-cup mounds of batter about 2 inches apart onto 2 buttered large baking sheets or stoneware. I move them from the top rack tot he bottom rack at about 5 1/2 minutes in. They should cook for 11-13 minutes total.Then you simply combine the cake once it has cooled down with the cake and enjoy!
