Easy Roasted Cauliflower Recipe
I hope everyone is having a fantastic week so far! I’ve been doing pretty well on my journey to healthy eating, but I’ve been struggling when it comes to ideas for side dishes. I mean you can only have a side salad so many time a week ha! So as I was grocery shopping this week I took a stroll through the produce section looking for new ideas. I stumbled across the cauliflower and realized something, I have never tried cauliflower in any state other than raw. I know I know, crazy right? So I went ahead and bought some and took it home. I decided it would be best to try an easy recipe first, and if that went well I could find other ways to cook it. Well let me tell you, this easy roasted cauliflower recipe turned out SO amazing and it was done in no time at all! It was full of flavor (and not full of calories!) and I knew I had to share it with you guys! It’s also gluten free, so I hope you enjoy 🙂
Here is how to make this Easy Roasted Cauliflower Recipe:
You Will Need:
- 1 Head of Cauliflower
- 2 tbsp Olive Oil
- 2 Cloves Garlic
- Salt and Pepper (to taste)
- Optional: Parmesan Cheese
Step 1: Chop your cauliflower and mince your garlic. Put it in either a bag or a bowl. Add your olive oil and toss it together. Preheat your oven to 375 degrees.
Step 2: Spread your cauliflower onto a cookie sheet. Once your oven is preheated, baked at 375 for 25-30 minutes, or until roasted. (Note, if you like a big crunch, roast a little longer. I like mine still slightly soft).
Step 3: Top with salt and pepper and a sprinkle of Parmesan cheese. Serve hot.
How easy was that right!? I am in love with this roasted cauliflower recipe! It takes just minutes to prep, and it smells wonderful while it’s cooking. Even my 7 year old liked the taste of it. That is a win win in my book.
