If you love bacon like we do then let me share some good things to eat with bacon. We are going to make a couple of quick southern dishes.

I fell in love with jalapeno poppers while in Texas, and I was smitten with shrimp and grits when I ate them in South Carolina. I think love finds your palate and my love involves bacon. These savory recipes will be crowd pleasers. I hope they will also find themselves in your recipe collection because they are delicious. You know they are also gluten and dairy free so my husband can eat them.

Shrimp and Grits with Spinach and Bacon Recipe

Grits Ingredients:
1 cup water,
1/2 cup coconut milk,
1/2 cup grits, ( I bought instant by mistake and they worked great.)
1/2 teaspoons sea salt,
1/2 teaspoons garlic powder,
1/4- 1/2 teaspoons red pepper flakes.

Creamy spinach ingredients:
11oz of fresh spinach,
1/2 cup coconut milk,
1 tablespoons starch,
Pinch sea salt and black pepper.

Toppings
4 pieces of Wright Brand Bacon,
10-12 pieces of shrimp cooked in olive oil.

Shrimp and Grits with Bacon and Spinach

Directions:

Grits
In a pot bring 1 cup of water to a boil. Next, add in grits and coconut milk. Add in spices. Cook for 10-12 minutes.

Bacon
In a large skillet over medium heat, cook Wright Brand Bacon slices. Once bacon slices are done, remove from heat and place on the paper towel.

Shrimp
Then use the same pan to cook shrimp. Cook shrimp a few minutes on each side. Once done remove from heat.

Spinach
In a small saucepan place spinach in. Add in olive oil to the pan. I coat it lightly. Sauté spinach by adding in the coconut milk and starch. Stir the coconut milk and the starch. Sprinkle in sea salt and black pepper. Remove from heat.

How to plate
On a large plate scoop creamy spinach, then put a scoop of grits and then the shrimp. Break the Wright Brand Bacon over the top.

Ingredients:
12 medium jalapeno peppers.
8 ounces cream cheese, softened.
12 cooked shrimps.
2 Tablespoons finely chopped fresh cilantro.
1 Tablespoon fresh lime juice.
¾ teaspoon kosher salt.
12 Hickory Smoked Wright Brand Bacon slices.
24 wooden toothpicks.
Gloves.

INSTRUCTIONS:

Preheat oven to 400 degrees.
Put on gloves if you have some. You can use a plastic bag over your hand.
Cut each jalapeno pepper in half lengthwise and remove seeds.
If you do not have gloves be very careful not to rub your eyes or blow your noses.
Stir together the cream cheese, cilantro, lime juice, and salt.
Spoon 1 ½ to 2 teaspoons of mixture into each pepper half.
Then put shrimp on top.
Wrap each half with a Wright Brand Bacon piece, and secure with wooden toothpick.
Place popper in a lightly greased cast iron pan or on a wire rack in aluminum foil-lined rimmed backing sheet.
Bake in preheated oven about 25 minutes.
Increase oven temperature to broil, and broil until bacon is crisp, 2 to 3 minutes.
Then let stand 5 minutes before serving.
