3 Asian Cocktails and a Mocktail
While a night on the town used to hold so much excitement, as a busy mom approaching my forties like a freight train barreling down the tracks, I find myself wanting to stay in more and more. I have also found that a night in can be just as much fun, if not more, than a night out.
Inspired by the new family size meal options from P.F. Chang’s Home Menu, offered in Orange Chicken and Chicken Fried Rice, I decided to go all out and create a night at home that rivals any night out at a restaurant. Wok Wednesday is our new family tradition! Combining several easy to make P.F. Chang’s Home Menu skillet meals and appetizers with several fun Asian cocktails makes for a fantastic mid-week celebration of family and fun. I also made a mocktail for the kids so everyone could toast the occasion.
Using only 3 types of liquor you can make 3 different Asian inspired cocktails. Add a quick trip to the grocery store to pick up your P.F. Chang’s Home Menu favorites and your easy weeknight dinner is all set.

P.F Chang’s Home Menu Signature Pork Dumplings
P.F Chang’s Home Menu Family Size Chicken Fried Rice
P.F Chang’s Home Menu Family Size Orange Chicken
SOHO Lychee liqueur
Mango Liqueur
Blue Curaco
100% blue agave silver tequila
Mango juice
Lime juice
Vanilla ice cream
Oranges
SOHO Lychee Lagoon Punch
3 cups SOHO Lychee Liqueur
1 ½ cups blue curaco
3 ½ cups club soda
Orange slices
Mix all ingredients in a large punch bowl with ice. Add orange slices to the punch bowl.
Mango Margarita
1 ½ ounce 100% blue agave silver tequila
1 ounce mango liqueur
½ ounce lime juice
mango juice
Pour the tequila, mango liqueur, and lime juice into a cocktail shaker with ice. Shake well and strain into a chilled margarita glass. Fill glass with mango juice. Garnish with a slice of lime and mango.
This next cocktail is more of a shot than a cocktail. My suggestion is to mix up two shots, invite your spouse into the kitchen to enlist in help cooking dinner, and reward him with a shot. It will make you both feel like you are young and will definitely make dinner prep more enjoyable.
Crouching Dragon
¾ oz 100% blue agave silver tequila
¾ oz lychee liqueur
Pour ingredients into a cocktail shaker filled with ice. Shake well and strain into 2 shot glasses.
Mango Julius Milkshake Mocktail
1 cup mango juice
2 ounces milk
1 scoop vanilla ice cream
1 tsp vanilla extract
Place all ingredients in a blender with ½ cup of ice. Blend until smooth and serve with a slice of mango garnish. You can add more juice if the drink is too thick and more ice cream if too thin.
My husband was busy cooking up our delicious dinner, while I was mixing the cocktails and making milkshakes for the kids. I gave him 2 skillets, a wok, and my 3 P.F. Chang’s Home Menu choices and he happily stirred up dinner. It really is that easy and takes less than 15 minutes for each dish. P.F.
