Crab & Asparagus Soup Recipe
I am the only one in my immediate family that likes asparagus. I usually can’t eat the whole bunch before it goes bad. This week I decided to try to make asparagus soup. A deli down the road from me makes Crab & Asparagus soup that is really tasty. Plus, with the crab meat in the soup there was a chance that hubby would try it!
Crab & Asparagus Soup Recipe
1 Bunch Asparagus
5 cups Chicken Broth
1 small onion, chopped
6 oz. Lump Crab Meat
1/2 cup Cream
Dash of Nutmeg
Dash of Old Bay Seasoning
Wash asparagus and cut 1/2″ of the woody end off. Chop up the rest of the asparagus. Bring the chicken broth to a boil and add asparagus and chopped onion. Cook for about 30 minutes or until asparagus is very tender.
When the asparagus is cooked through, blend the broth mixture. I used a stick blender. Add in the crab, cream and seasoning. Cook for a couple of minutes until heated through.
Guess what? My hubby really enjoyed this soup! He said it did not taste like asparagus at all. He said I should just call it crab soup!
