Low Calorie Recipe: Beef Stew and Soda Bread
In honor of St.Patrick’s day on Sunday, I wanted to make a traditional Irish Meal, but corned beef isn’t exactly the most waist friendly meal, so I found this awesome recipe for Low Calorie Recipe: Beef Stew and Soda Bread and I knew that would be perfect for our evening meal. It turned out to be so yummy and filling! Oh, and it was the easiest thing to make!I had never made bread before so I was a little worried, but it came out perfect!
Here is what you will need to make this Low Calorie Recipe: Beef Stew and Soda Bread:
For the Stew:
- Stew Meat (I used about 2 lbs for a family of 4
- 2 cans Low Sodium Beef Broth (I grabbed the wrong kind!)
- 1 lb white potatoes
- 1 1/2 cups sliced carrots
- 2 celery stalks
- 1 onion
- Spices (I used parsley and bay leaf)
- 1/2 cup red cooking wine
- 2 tsp cornstarch mixed with 1/4 cup water
For the Bread:
- 3 cups Flour
- 1 1/2 tsp Baking Soda
- 1 1/2 tsp Salt
- 1 1/2 cups Low Fat Buttermilk
Directions for making this Low Calorie Recipe: Beef Stew and Soda Bread:
For the Stew:
Step 1: Peel the potatoes and cut them into cubes. Put them in the bottom of your crock pot.
Step 2: Add your sliced carrots, celery, and onions.
Step 3: Add your stew meat, red cooking wine, and beef broth, stir around to mix, and add your spices. Make a paste from your corn starch and water, and pour on top of your mix.Set your Crock Pot on low and cook for 6 hours or until your meat and veggies are tender.
For the Bread:
Step 1: Combine your flour, Baking Soda, and Salt together in a large mixing bowl, and whisk together.
Step 2: Create a well in the center of your dry mix and slowly pour 1 cup of your low fat buttermilk in the center of the well, (save the 1/2 cup) and slowly begin to stir the mixture together, folding in the buttermilk with the dry ingredients, then slowly add the remaining 1/2 cup of buttermilk, and continue to stir until a dough has formed.
Step 3: Lightly flour your surface and your hands and knead the dough for 1 minuet, or until soft. (this was my husbands favorite part haha)
Step 4: Form a round ball with the dough and flatten in on a piece of parchment paper on a cookie sheet, and take a knife and create a deep “x” shape, bake at 375 degrees for 40-45 minutes. The bread is ready when it is golden and sounds hollow when tapped on the bottom. (we tried to color our bread green for the holiday, but it ended up just looking like regular bread when it was cooked lol!
Step 5: Let cool and slice! This is a dense bread, so I suggest small slices!
This Low Calorie Recipe: Beef Stew and Soda Bread was so yummy and easy to make! It was filling, and perfect for an easy dinner that your whole family will love! I gotta say the Irish knew what they were doing with this meal!
