Skinny Italian Cream Cheese Frosting Cupcakes
This weekend my family is celebrating my Dad’s Birthday! His…30th….Birthday…yeah..Ha! Every year he requests an Italian Cream Cake as his birthday treat, and every year we scour the stores to find one. (They are actually pretty hard to find around here!). But truth be told we shouldn’t be getting him this indulgent cake every year. Why? Well, he is diabetic. Now you see the problem right? I didn’t want to deprive my dad of his favorite cake, so I thought this year I would try to make some Skinny Italian Cream Cheese Frosting Cupcakes! Are cupcakes good for you? Nope. Are these cupcakes better for you than a big slice of traditional Italian Cream Cake? Absolutely!
I very much believe that you can eat most anything you want, as long as it is in moderation! These cupcakes clock in at 256 calories per cupcake, and I’m telling you, it’s better than any store bought cake I have bought! Would you like to learn how to make them now? Lets do it!
Here is how to make these Skinny Italian Cream Cheese Frosting Cupcakes:
You Will Need:
For the Cake:
- 2 Cups all purpose flour
- 1/2 cup (softened) butter
- 5 egg whites
- 1 tsp vanilla extract
- 1 cup sugar
- 1/2 cup applesauce (unsweet)
- 1 tsp baking soda
- 1 cup buttermilk
- 1/2 cup flaked coconut
- 1/2 cup (chopped) pecans
For the Frosting:
- 8 ounce reduced fat cream cheese
- 1 tsp vanilla extract
- 2 cups powdered sugar
- 2 tbsp (softened) butter
Step 1: In a large mixing bowl, beat together your butter and sugar for around 2 minuets. Stir in your applesauce, and then add in your vanilla and eggs. (Beat for 1 minuet) Add in your flour, baking soda, and buttermilk. Mix
Step 2: Next, Fold in your pecans and coconut! (and try not to dip your finger into the batter and eat it all Ha!)
Step 3: Preheat your oven to 350 degrees. Pour your batter into your cupcake liners (about 1/2 way up). Bake for 25 minuets.
Step 4: Let your cupcakes cool! While they are cooling make your icing! (In a small bowl combine the cream cheese, butter and vanilla, mix well then slowly add in your sugar until you icing forms.)
Step 5: After your cupcakes have cooled spread your icing over your cupcakes and top with chopped pecans!
That’s it! Just 4 simple steps and you have a fluffy, yummy, and better for you sweet treat for a birthday, or any other reason you can think of! (As if we need a reason to eat a cupcake right?)
