Smoked Sausage Corn Chowder Recipe
This soup is a family favorite and the recipe has been passed to me from my mother in law. I still remember the first time I had this soup and I love it every time I make it. We eat a lot of crock pot meals and soups but so many of our favorite recipes have chicken in them that we get tired of chicken. This smoked sausage corn chowder recipe is a nice way to change things up.
Smoked Sausage Corn Chowder Recipe
Ingredients:
2 pkgs Smoked Sausage, sliced
3 cans whole kernel sweet corn
3 cans cream corn
1 onion, chopped
1 green pepper, chopped (optional)
1 container fresh mushrooms, sliced
16oz sour cream
family size bag frozen hashbrowns, cubes not slivers
1 tbsp olive oil
pepper
Note: If you slice up the Smoked Sausage before you are ready to add it to the pan you may have to fight off the sausage thieves. The thieves, big and small, with their little hands quick as lightning will steal the sausage slices right off the plate right out from under your watchful eyes.
Directions:
In the bottom of a large heavy bottom soup pot. Saute onions, green peppers (optional), and mushrooms until soft in a tbsp of olive oil. Add sausage and saute until heated through or lightly. browned. Add corn and cream corn. Bring to a boil and then allow soup to simmer on low heat for several hours.
An hour before you are ready to eat, add the bag of hashbrowns. Add sour cream right before serving. Serve with fresh bread.
