Minnesota Casserole
Growing up my favorite casserole my mom made was something she called Minnesota Casserole. It was delicious good and always smelled good when she cooked it in the oven. The best time was when she cooked it in the crock-pot because then it smelled delicious all day long. It is truly a recipe you can put in the crock-pot and leave for the day.
Minnesota Casserole
(Makes 4 servings)
Ingredients
- 5-6 Peeled and cut potatoes (I cut them up in small chunks)
- 1 lb Ground Beef/Hamburger
- 2 cans cream of mushroom soup
- 2 cans vegetable soup
Layer ingredients in the order they are listed.
Place lid on crockpot and cook on low for 8-9 hours or high for 4-6.
If I am feeding more than 4 people, I add more potatoes and use the Family size cans of cream of mushroom and vegetable soups.
This is a nice treat on a fall/spring day.
