$5 Dinners – Baked Lime Tilapia
Here’s the second dish I prepared from Erin Chase’s $5 Dinner MOM Cookbook. We chose the Baked Lime Tilapia this week since we purchased 4 lbs. of individually, quick frozen tilapia filets at Walmart this weekend for just $12! That’s $3 a pound. We already had the rest of the ingredients: lime juice, olive oil, dill weed, salt and pepper.
The yellow rice was leftover from a previous meal and frozen peas are a staple in the freezer.
The recipe was fast, easy and delicious! Five minutes to defrost tilapia, whisk together lime marinade, marinate for 30 minutes while oven preheated, bake for 10-15 minutes. While fish was baking, I was reheating rice and cooking peas. Voila, a great meal in no time!
Cost breakdown:
1 lb. individually, quick frozen tilapia filets – $3.00
lime juice – $0.10
olive oil – $0.10
dill weed – $0.05
yellow rice – $0.25
frozen peas – $0.50
salt & pepper
Total = $4.00
Erin provides great tools for strategic shopping, meal planning and coupon shopping in the introductory chapters of the cookbook. I, personally, employ many of these strategies with the exception of meal planning. I just haven’t nailed that one down yet!
