Divine Chicken from Leftovers
I am always looking for ways to spruce up leftovers, especially chicken. I am also in a rush several nights a week. Today while trying to figure out what to do with some leftover boneless, skinless chicken breasts I had leftover from Monday night, inspiration hit and this is what I came up with.
Divine Chicken from Leftovers
Ingredients
- 4 boneless skinless chicken breasts (already cooked)
- 1 can of spinach
- 2 cans of cream of mushroom soup
- 1 box of bowtie pasta or other flat pasta
- 2 cups of shredded cheddar cheese
Cook pasta according to package directions.
While pasta is cooking, Slice leftover chicken and place in bottom of 9×13 pan.
Layer the spinach, cream of mushroom soup, and then pasta on top of the chicken.
Finish off by sprinkling the shredded cheddar cheese on top.
Spray a sheet of aluminum foil with Pam and put on top of pan.
Bake at 350* for approximately 30 minutes. I had made mine ahead of time and put it in the fridge so it took about 60 minutes to cook.
***Other suggestions –use more spinach to increase your veggie intake, do a layer of canned mushrooms, substitute cream of chicken soup for the cream of mushroom****
