Gluten Free No Bake Cookie Bites
If you are gluten free and are looking for a yummy treat you can enjoy any time then I have a recipe you are going to love! As most of you know I’m trying this whole healthy eating lifestyle (I’m not calling it a diet, because I want to eat well forever right!?) and I’m trying to be as gluten free as I can be. And as someone who loves cookies, I was afraid I wouldn’t be able to enjoy them anymore, but then I remembered a recipe for Gluten Free No Bake Cookie Bites that are not only (pretty) good for you, but are super easy to make. Let’s check them out:
Here is how to make my Gluten Free No Bake Cookie Bites:
You Will Need:
- 1/2 Cup Rolled Oats
- 1/2 Cup Peanut Butter
- 1 tsp Sea Salt
- 1/3 Cup Dark Chocolate Chips
- 2 tbsp Coco Powder
Step 1: in a bowl combine all of your ingredients and mix together well. I found that using a fork to mix was the quickest and most efficient way to combine everything.
Step 2: Lay out a piece of parchment paper (you could also you foil, freezer paper, etc) and begin taking about a spoonful of your mix and rolling them into balls in your hand.
Step 3: Place your cookie balls on to your parchment paper (This recipe makes about 12 balls depending on how big you make them) and once you are done put your now formed cookie bites into the fridge and chill for about an hour.
Step 4: Take your Gluten Free No Bake Cookie Bites out of the fridge and enjoy!
These are just the right amount of sweet and salty and are perfect to grab when I’m feeling like I need something bad for me ha!
