Easy Caprese Salad Recipe
I recently wrote about starting a pizza garden with my kids. Watering our garden has been a fun little way to break up the day with my four year old. Picking the spoils of our labor has also been very rewarding. The kids were very excited to make our first margarita style pizza (basil, tomato, mozzarella). The very gamely tried it, but neither of them like basil or tomato… The two things they actually grew! Nonetheless they loved it. So success is in the eye of the beholder.
Deconstruct Your Salad!
I tried to convince them they should try it again, but it was pointless. Not wanting anything to go to waste, I made a deconstructed caprese salad for dinner. Since I am not typically a fan of tomatoes, I like the deconstructed option because I can add a little bit more green and not have to make several salads. DIY salad all the way! I also added spinach and some soft lettuce to the mix and put the balsamic directly on the plate so I can just dip it in as much as I want.
In our garden we grew cherry tomatoes, basil, spinach, lettuce, and peppers. The peppers didn’t make it unfortunately. I have a feeling that was entirely on me. We watered daily, but I think I placed them in the wrong spot in our yard for survival. The tomatoes grew like crazy though. Same with the basil. I am thinking there may be some pesto in our future!
Recently I got a new camera and designed a picture box to take clean photos in. I figured this would be a good opportunity to test out some skills (or at least practice). So I set up a pretty plated salad and I think it turned out pretty nice.
The great thing about a deconstructed salad is being able to include as much or as little of each of the ingredients as you want. Also, with three kids it saves time to simply keep things individually and let them mix it up themselves.
So it wasn’t the grand Pizza Garden Pizza Party I envisioned, but I am pretty excited about how I grew some form of a meal all by myself. I don’t have much of a green thumb, but I have hope that someday I might!
