I love corned beef. I not sure when and where it happened, but it did. I have a clue that it happened on a plate in NYC. I had my first Reuben. The flavors overwhelmed my lips in bliss. I always thought that this was an Irish dish, the corned beef. It turns out it is an Irish American dish. The Irish Americans used corned beef instead of bacon when it is wasn’t available. I recently visited Ireland, and there wasn’t corned beef in abundance. You can see what I ate while there in my post best restaurants is in Ireland.

Pressure Cooker Corned Beef Recipe
Ingredients:
Corned beef (The kind with the spices)
One can of beer
potatoes (Optional)
2 cups of carrots (Optional)
You can add in cabbage if you want (We didn’t because we were making Reubens and we were using sauerkraut.
Here’s how to make Corned Beef in Pressure Cooker XL
In your pressure cooker place your vegetables first at the bottom.
Pour 1 1/2 cups of beer on top of the vegetables.
Then put in your trivet or you can use this excellent sling.
Place the corned beef on top of the sling or the trivet.
Then sprinkle with the pepper pack that came with the corned beef
Finally, turn on the pressure cooker set it for 25 minutes.
Once it has cooked let the water release then I suggest being careful and using your mitts as you open the pressure cooker.
Then take the corned beef out and place it on a cutting board.
Cut the corned beef at and angle to get the best flavor.

You can eat with the potatoes or place it on Rye bread with Thousand Island dressing (Ketchup, Mayo, and relish), swiss cheese, sauerkraut for a Reuben.
