Tortellini Alfredo Recipe
Pasta, chicken and broccoli all in one dish! You have your carbs, your protein and veggies in this Tortellini Alfredo recipe, and the best part no one can even guess that it’s a leftover recipe because it’s so good.
Tortellini Alfredo with Chicken and Broccoli (Repurposed Recipe)

1 (16. oz.) pkg. frozen tortellini
3 Tbsp. butter
4 oz. cream cheese
1 1/2 cups milk
3/4 cup grated Parmesan cheese, divided
1/2 tsp. kosher salt
1/4 tsp. ground black pepper
1 (12 oz.) steam in the bag frozen broccoli florets
2 cups cooked chicken (leftover from Grilled Chicken Caesar Salad)
2 Tbsp. finely chopped flat leaf parsley
Put a large pot of salted water onto the stove over high heat. Bring to a boil. Add tortellini and stir. Cook for 4 – 5 minutes until tender, drain the tortellini and return it to the pot.
While waiting on the water, prepare the Alfredo sauce. Add the butter and cream cheese to a sauce pan over medium-low heat. Cook, stirring occasionally until the butter and the cream cheese has melted, about 4 minutes. Add the milk, salt and pepper. Whisk until the mixture is heated through and smooth, about 5 minutes. Reduce the heat to low and add 1/2 cup Parmesan.
Stir until smooth, about 3 minutes.
Cut the chicken into bite-sized pieces. Add the chicken into the Alfredo sauce and stir to combine. Leave the heat on low.
Cook the broccoli in the microwave according to package instructions. Drain the cooked broccoli and add it to the tortellini. Pour the sauce and chicken over the tortellini. Gently stir to combine. Garnish each bowl with a sprinkling of parsley and Parmesan.
