Cranberry and White Chocolate Chip Cookies

Make yummy Christmas cookies for the whole family. My family loves my Cranberry and White Chocolate Chip Cookies and it’s a super easy cookie recipe. I make lots of these and pack them nicely for a delicious homemade Christmas present for teachers, friends and neighbors.

Cranberry  White Chocolate Chip Cookies Recipe

Cranberry  White Chocolate Chip Cookies Recipe

In a large mixing bowl combine the following Ingredients:

½ cup of butter

½ cup of shortening

1 cup of packed brown sugar

½ cup of granulated sugar

2 large eggs

2 Tablespoons of Vanilla

Then in a separate bowl combine

2 ½ cups of flours
1 tsp of baking soda
1 tsp of baking powder

½ tsp of salt

You will add the dry ingredients to the wet ingredient.

Then slowly add the final ingredient
1 cup of coconut flakes
1 cup of fresh cranberries
1 cup of white chocolate chips

Then you will make round balls and place them in a cookie sheet.

You will turn the oven on at 350 degrees and cook them for 13-15 minutes until they are golden brown.

Cranberry and White Chocolate Chip with Nuts Christmas Cookies Recipe

Ingredients:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup light brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup white chocolate chips
  • 1 cup dried cranberries
  • 1/2 cup chopped nuts (optional, pecans or walnuts work well)

Instructions:

Preheat the Oven:

Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper for easy cleanup.

Cream the Butter and Sugars:

In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

Add Eggs and Vanilla:

Beat in the eggs, one at a time, ensuring each is fully incorporated. Add the vanilla extract and mix until smooth.

Combine Dry Ingredients:

In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.

Incorporate Dry Ingredients:

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.

Fold in Mix-Ins:

Gently fold in the white chocolate chips, dried cranberries, and chopped nuts (if using) until evenly distributed throughout the dough.

Chill the Dough (Optional):

For thicker cookies, chill the dough in the refrigerator for at least 30 minutes. This step helps prevent cookies from spreading too much during baking.

Portion the Dough:

Using a cookie scoop or a spoon, drop rounded balls of dough onto the prepared baking sheets, leaving space between each for spreading.

Bake to Perfection:

Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. The centers may appear slightly undercooked but will set as they cool.

Cool and Enjoy:

Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely. Once cooled, share these delightful treats with family and friends!
