Easy Crockpot Meatloaf
I love a good meatloaf it is a great way to stretch your buck. I decided there is a real need for stuffed meatloaves that are easy to make. I loved using Apricot inside of our meatloaf that savory sweet taste really is a winner. We all know I am a huge freezer to crockpot meal recipes fan. This is just another great recipe to add to your collection.
Ingredients for your Easy Crockpot Meatloaf:
- 1/2 Jar of Apricot jam or 9 oz
- 1 Large Onion (Chopped)
- 1 Large Bell Pepper, chopped
- 2 Eggs, beaten
- 3/4 Cup Milk
- 3/4 Cup Breadcrumbs
- 1 Package Dry Lipton Onion Soup Mix
- 2-3 Pounds Ground Beef
- Foil to line the pot
- Crockpot
Easy crockpot meatloaf instructions
Line your crockpot with foil or buy those awesome liners for an easy clean up
Then set it on low
Mix together the Eggs…Milk…Dry Crumbs…and Onion Soup Mix.
Then add meat and Onions and Peppers… mix all thoroughly
Then make in to a boat shape and fill it with the jam.
Then a attach the sides to the top. I always reserve a little of the jam to glaze the loaf 15 minutes prior to serving!
Cook for 6-8 hours

Place two eggs in a bowl
Blend the eggs
Add the 3/4 cup of milk
Add in your 3/4 cup of bread crumbs
Pour in a package of the onion mix
Mix together the Eggs…Milk…Dry Crumbs…and Onion Soup Mix.
Chop your pepper
Then add meat to the onion, bread crumbs, and egg mixture
knead this together
I chop my onion last even though I know how to avoid onions.. see our tips on how not to cry when cutting onions
Then add Onions and Peppers… mix all thoroughly
Then make the meat into a boat shape and fill it with the jam.
Place the Apricot jam in the meatloaf
Then wrap your meat loaf in the wax paper to place it in foil… you can just skip the wax paper and use foil. If you are going to cook this now… line your crockpot with the foil and build your boat in the crockpot and add the jam in there. I am going to freeze this so I wrap it in foil and then I place it in a freezer bag. I had to use two because of the size but that is fine. When you are ready thaw this and place it in your slow cooker for 6-8 hours.
You can glaze it with the Apricot Jelly 15 minutes prior to serving just paint it on while cooking… enjoy!
