I am always looking for fun healthy recipes for kids to make for my little girl. Luckily, we love fruits around here and so when I saw these super cute mini watermelons I knew I had to give them a try! It is a fairly simple recipe and only has 2 ingredients!

Fun Healthy Recipes for Kids: Mini Watermelons
Ingredients
- Strawberry Jello I used sugar free
- Limes
- Poppyseeds
Instructions
- Cut 6 limes in half and scoop out the insides
- Make the jello according to package directions, and then fill each lime half with jello. Put in the fridge and let cool for 4 hours, or until firm
- Carefully cut each lime in half again lengthwise, top with poppy seeds (to act as the "watermelon" seeds) and serve!

This recipe is great for a hot summer day, and you could even throw them into the freezer and create fun “ice” for summer drinks! For a more adult drink, you could add vodka, and make them jello shots!
