Do you need a quick and delicious recipe that you can make with your leftover holiday ham? I have the perfect leftover ham and cornbread casserole recipe to share with you. Do you know why it is so easy? It’s because you can use the Martha White® Cotton Country Cornbread mix that you have in your cabinet. I have made this with their Mexican cornbread mix and their plain cornbread mix as well. Martha White’s baking mixes are the perfect way to remake that ham into round two of greatness. This baking mix, some water, milk or buttermilk, egg, cheese, peppers, leftover corn or frozen corn, and bacon if you have some will make your leftovers sing a country tune. Leftover Ham and Cornbread Casserole Recipe

Ingredients:

1 cup of cooked ham
6 slices of cooked bacon
1 cup of diced peppers
1 cup of corn (leftover or frozen)
1 1/2 cup of water, milk, or buttermilk
2 Martha White® Cotton Country Cornbread mixes or any two of the Martha White® Cornbread Mixes
1 egg
1 1/2 cup of sharp cheese but I have used other cheese whatever you have on hand

This is an easy peasy recipe because Martha White® makes the cornbread just right.

Just place two Martha White® baking mixes in a bowl, you can add the liquid you have on hand. I used buttermilk, but I have also used water and milk.

Then add cup of corn, an egg and the cooked ham. You will need to stir the mixture until the egg is blended.

Then add the peppers and  finally a cup of cheese.

Then stir everything.

You will place this in the oven at 400 degrees for 40 minutes.

Leftover Ham and Cornbread Casserole Recipe

When you get to 40 minutes, place the remaining 1/2 cheese on the top with your crumbled cooked bacon. Then cook for 5-7 minutes.
