I am forever trying to find different cake mix cookie recipe and the easier they are the better, that is if it takes good. I found a winner here. You can not get any easier than this! Just 4 ingredients and they taste amazing! I love going to the mall and getting a piece of cookie cake… and if my husband isn’t with me I ask for extra icing!! Hey, don’t judge, I’m 8 months pregnant. I have tried making cookie cakes at home but I usually get the outside over cooked and the middle is still a little gooey. This recipe is a winner! Everything was fully cooked and none of the cookie cake was over done! Next time I try this I will mix up the ingredients because I love a peanut butter cookie cake. This time I just went with the classic chocolate chip.
This is a great recipe for kids to make as well!
Cake Mix Cookie Recipe
- 1 box of yellow/white cake mix (I used a butter cake recipe, stays moist longer)
- 2 eggs beaten
- 5 tablespoons of melted butter
- 2 cups of chocolate chips
Pre-heat oven to 350 degrees. Mix all ingredients together in a large bowl. It will be very thick and that is ok! Grease a 9 x 13 pan and then spread the mixture into the pan. Again, because it is so thick it will be hard to spread. I used my fingers to do it…darn, or you can use a greased spoon to help!
Once you oven is pre-heated, bake for 20 minutes. Let it sit for at least 20-30 minutes. If you try and serve right away it is hard to cut. Just like a cake you need to let it rest for a little while. I will still be soft and chewy!!
