Mussels Recipe for the Pressure Cooker
I get asked all the time can you make mussels in the Pressure cooker or Instant Pot? I think it is because my kids love the recipe. I also know that I am not spending $13.00 a person to eat it when we are out but that is what it cost. I figured I could feed my family of five for under $20 if I buy 5lbs of mussels and less if I make less or if they are on sale. I decided because I am cheap and because I love mussels on my plate and the guy with muscles in my home that I would figure out an easy Mussels Recipe For The Pressure Cooker.
Mussels Recipe For The Pressure Cooker
I did it because I really love a flavorful dinner and I get tired of ground beef and chicken. I also find that mussels are reasonably priced. I get a huge 5 lb bag for $13 at Costco. And believe me cooking mussels in the pressure cooker is super easy.
I can make it last for two dinners if I serve A Cheesy Pull apart Garlic bread, Spring Spinach salad, and pasta with my homemade marinara sauce.
Easy Mussels Recipe For The Pressure Cooker XL
Note: Cooking time doesn’t change based on the number of mussels you put in the pot.
Ingredients:
Mussels – I can put 3 lbs in my 8 QT Pressure Cooker XL. I make one set and then I just make the rest. If you plan to make 5 lbs. Then you would just use half my easy recipe.
1/2 cup of Wine
3 TBS of Garlic
1 large can of Diced Tomatoes 28 ozs (I usually grab some with an Italian blend but this time I did the plain version)
3 TBS of non-dairy Butter
A handful of scallions or Italian parsley works. I just like to see some green.
(Pasta and Marina sauce although my husband just likes the juice from the pressure cooker on his plate.
The kids like my homemade marina sauce jar sauce works fine from the store. I just make a ton of this and freeze it.
Plug in your pressure cooker and put in 1 1/2 cup of water. (2 cups if you skip the wine)
Look at the mussels and make sure they are all closed. You do not want to eat anything that is already open prior to cooking. Also, clean off the shells.
Next, put your steamer in the pressure cooker (You can put the mussels in without it. I just think this contains the mess.)
Put the mussel on top of the steamer
Add the garlic
Slice up the butter
Pour on the wine
Top with the scallions or the Italian parsley
Then dump the can of tomatoes
Then close the pressure cooker. Put it on for 8 minutes in the manual setting.
Once the pressure cooker is done cooking release the pressure using your mitts
Make sure the mussels are open before you serve them. If they didn’t open and there are only a few then they are bad if most of them didn’t open you need to put them back in the pressure cooker for longer.
I usually serve them over pasta (Gluten-Free Pasta) . I make my pasta on the stove. You can use the juice under the steamer and pour it over the pasta or just serve them with marinara sauce.
