Acai Chicken Wrap

After eating a wrap at a local chain restaurant, I had to come home and try to make this myself.  The Acai Chicken Wrap recipe is one that is simple to prepare and nice to make a day (or at least a few hours) ahead of time.  The longer the flavors can mingle, the better it will taste.  I made it into a wrap, but you can also use this as a salad.  Acai juice, pumpkin & sunflower seeds, and   spinach leaves really pump up the nutritional value of this wrap. Not to mention they make it taste great. The wrap makes a great, light and healthy lunch option! If you are tracking wiehgt watchers points this wrap counts as 11 points per wrap.

Chicken Wrap with Acai Dressing Recipe 

Acai Chicken Wrap

Ingredients
  

  • 2 Boneless skinless chicken breasts
  • 1 tablespoon Mrs. Dash Garlic & Herb
  • 1/2 cup Acai juice or juice blend
  • 3 tablespoons Granulated sugar
  • 3 tablespoons Rice vinegar
  • 1 1/2 tablespoon Light/mild extra virgin olive oil
  • 2 tablespoons Lemon juice Can substitute orange juice
  • 1/2 cup Craisins
  • 1/2 cup Roasted & salted pumpkin & sunflower seed mix or 1/4 c. of each, respectfully
  • 1/4 cup Grape tomatoes quartered
  • 1/2 cup Seedless cucumber cubed
  • 1 pinch Freshly ground black pepper
  • 4 Italian Herb or Spinach wraps
  • 1/4 cup Fresh spinach leaves

Instructions
 

  • Bring a large pot of water to a boil and add chicken and Mrs. Dash. Cook until done, approximately 20 minutes. Check internal temp with a meat thermometer if unsure.
  • Remove chicken from water and let cool while you prepare the dressing.
  • In a small bowl, combine Acai juice, sugar, vinegar, olive oil, lemon juice and stir until dissolved.
  • Add craisins, seeds, tomatoes, cucumber, pepper and chicken to dressing and mix well.
  • Begin to assemble the wrap with spinach leaves, then spoon on chicken mixture. Fold the wrap & enjoy!
  • Makes 3-4 wraps.

What are your favorite wraps? Do you eat them for lunch, dinner, or both? We love to make wraps and take them to swim meets for our dinner. So much healthier than the food from the concession stands and they travel well when you wrap them individually in aluminum foil. Wraps are also a nice break from the monotony of sandwiches. Do your kids eat wraps? Try it and you might be surprised how much they like wraps. You can even use their favorite sandwich ingredients in wraps. How about a peanut butter jelly wrap? I have found when my kids get picky about lunch if we shale things up and switch to wraps instead of sandwiches that it breathes new life into lunchtime.
