Quick Weight Loss Tip: Filling Your Body With Great Tasting Healthy Foods….
There seems to be a big trend on social media with people sharing recipes. What I am finding, however, is that a lot of those recipes are filled with empty calories, lots of sugar, fat and other unnecessary junk that literally weigh you down instead of fueling your body appropriately. I am constantly on the lookout for recipes that are relatively quick, inexpensive and full of flavor. In the past five months I’ve put away the bacon fat and pulled out the olive oil. I also use more spices, less salt and absolutely no sugar. The no sugar element is a big deal for me because sugar used to be a main staple in my diet. Making the decision to get healthy is a great first step, but maintaining that decision and working toward a goal every single day can be a bit more daunting. Quite often we find ourselves in a food rut, meaning that we eat the same bland, boring meals day in and day out. After a while when we can’t take it any longer we give up and return to our old ways of eating because quite frankly we miss those wonderful flavors and the way good food makes us feel. For food addicts like myself, it’s difficult to stay interested in healthy food choices; it’s necessary to not only fuel your body but to enjoy the fuel you are putting into your body. Food can be good and healthy at the same time.
A friend messaged me the recipe below a couple months ago and I love it. Not only is it easy to put together it is extremely low in calories and tastes amazing. The flavors and textures make it difficult to believe that each half is only 150 calories.
Quick Weight Loss Tip Recipe
STUFFED PEPPERS 150 CALORIES PER HALF
- Olive Oil
- 1/2 lb lean ground turkey breast
- 1 cup chopped onions
- 1 heaping tbsp of homemade taco seasoning (or you can use the packaged type if you like)
- 2 cups of cooked rice (any type you like – I like brown)
- 3-4 organic bell peppers, halved and seeds removed
- 1 can of black beans, drained & rinsed
- ½ cup of organic frozen corn
- 1 (15 -16 ounce) jar of salsa (I used mango peach)
- Shredded low fat Cheddar Cheese
- Toppings:
- fresh cilantro
- sour cream
- sliced avocado
Pre heat the oven to 400 degrees. Lightly coat the peppers with olive oil and roast in a baking dish about 20-25 minutes just until cooked thru. Remove the peppers from the oven and allow to cool until you can handle them.
Cook the turkey in a pan on the stove. Saute the onions until cooked thru, added in cooked rice, black beans and corn. In a bowl add the taco seasoning, cooked ground turkey, chopped onions, black beans, corn and rice. Add in the jar of salsa and mix well. Carefully spoon the turkey mixture into each half of the bell peppers and place back into the baking dish. Cook the peppers for another 15-20 minutes or until the peppers are cooked all the way thru. Before removing from the oven sprinkle the tops of each pepper with shredded cheddar cheese. Place back into the oven just until the cheese has melted. Remove from the oven and top with fresh cilantro, avocado slices and/or sour cream just before serving.
This week I encourage you to mix it up a little in the kitchen. Try new things, get creative and allow yourself to enjoy your meals. By filling your body with healthy food choices that you enjoy you will find that your weight loss and fitness success will rise.
