After being diagnosed with chronic Lyme’s disease and babesia I decided to change my diet to that of gluten/sugar/dairy free, you can read my story here. It’s quite heavy on the budget so to sustain my Gluten Free Diet I became more and more interested in making some of our staples rather than purchasing them. I’ve become a pro at making our own almond milk and coconut milk, almond butter, jelly, and broth. I save the pulp after making milk and incorporate it into various recipes as well. I was spending a fair amount of money getting started on all this as I needed many different ingredients that I did not have in my pantry. Many of these items are sold in the local grocery stores but in small amounts and at a high cost/pound. Already being avid amazon primers, I naturally gravitated to my computer to see if I could find these items cheaper but high quality as well. I found many and now, months later, I utilize

Because of the monthly shipping we have committed to, it brought down the price/pound to less than $6. This is a great deal!
I also purchase almond and coconut flours via amazon, both very high quality. They are some of the cheapest I have found and I don’t pay for shipping. Better yet, they get delivered to my door. Every recipe I have used with these flours has been wonderful!
I use my spiralizer weekly, several days a week actually. Not only am I making what looks like pasta, it actually gives me the feeling like I’m eating pasta, but it’s much healthier and homemade. This nifty device came reccommended by Danielle Walker herself. Worth every penny I spent on it. Thank you Amazon!

I have also purchased some smaller staples on amazon that I use regularly rather than making the trek to Whole foods and spending more money. Some of these items are palm shortening, cacao butter, ghee, coconut palm sugar, shredded coconut, various other nuts and spices, quinoa, gluten free oats and cereal to name a few.
This is all just the beginning of my journey. I am very thankful for this change and all that I have learned in the process. It has been eye-opening and enlightening. I read every label at the grocery store now. I desire to continue to learn new recipes and ways of cooking gluten free. It is more delicious than you might think!
Having been gluten free for several months now, I have noticed a big change in the way I feel. I have certainly slipped a time or two in the time I’ve been doing this and I almost immediately feel bad, physically. This change has absolutely made a difference. Having seen a nutritionist recently who only confirmed what my doctor did, I feel confident in sharing that this lifestyle change has only benefited my health and will continue to in the months ahead as I forge ahead in my battle against Lyme’s disease and babesia.
