We love eating chicken in the family so making meals that are full of flavor, and healthy can be hard but I had made a few in my pressure cooker, and I had to share them with you! This Simple Italian Chicken Pressure Cooker Recipe was so good, and the kids even loved it!
This Simple Italian Chicken Pressure Cooker Recipe is quick and easy, and you can add anything you want to it. If you want steamed brown rice, or you can try the pasta, I even make spaghetti squash and have fallen in love with it! So good! This recipe is very simple to make.

1 tablespoon of olive oil
1 onion chopped
1 tablespoon minced garlic
1 green pepper diced
1 yellow/ orange or red pepper diced
3 tablespoons of pesto
1 tablespoon of Spike
1 cup of marinara
3 boneless skinless chicken breast
Add the first five ingredients, olive oil, onion, garlic, and peppers and turn the pressure cooker on to sear/roast so you can cook them for about 5 minutes.
Next add the pesto, Spike, marinara, and chicken.
Seal the lid completely cook on high for 15 minutes. Once it beeps, release the pressure right away.
Remove the chicken breast only, shred the chicken and then place it back in the pot to mix well.
Again you can add rice to this, pasta or even spaghetti squash which is my favorite at the moment.
I hope you will give this quick and simple recipe a try and I hope you love it as much as I kids did!
If you do not have Spike you can use Italian Seasoning but I much prefer the taste of Spike you can order it here on Amazon for hardly anything or you can check your local health food store too! I buy the blue label which is Salt-Free. We try to be healthy as possible, and I can leave out the salt in this recipe with no problem!
